This cucumber salad is one of my favorites. I’m really NOT a fan of things that taste like vinegar but for some reason the subtle tartness of this salad is delicious to me.
Feeds 2-4
Ingredients:
- 1 English Cucumber, or 2 regular cucumbers. I prefer the English Cucumbers.
- 1/4 cup Rice Vinegar
- 1/2 cup Feta Cheese
- 1/3 cup Kalamata Olives (I usually just really eye ball the feta/olive measurements depending on what I feel like at that time.)
- 1/4 table spoon sugar
- 1/2 table spoon salt
Combine Vinegar, salt, & sugar in a container. Shave a little of the peel off, leave some though. Then slice cucumbers extremely thin. If you have a mandolin or food processor that will do it if you can’t get it that thin with a knife try that. The thinner the tastier. Toss the the sliced cucumbers in your vinegar bowl & put it in the fridge for an hour or so. When you are ready to serve, strain your cucumbers from the vinegar mix (otherwise its way too vinegary in my opinion) Put in your feta cheese & kalamata olives, toss, & enjoy. I usually slice the olives in half.

dude that looks amazing.
It reminds me of a thai style cucumber salad which i think is normally just like shaved cucumbers, red onions, rice vinegar and maybe sugar/some sort of heat.
It’s pretty good but, you have to like Rice Vinegar or you will hate it. Mercer hates it. It’s pretty tasty.
Do you use a mandolin? I have one I bought like 7 years ago when I worked at that kitchen store & it’s STILL in the box. Maybe I should break it out!
I don’t have one. I just use a knife.
