An Easy summer dish! If you have been following my recipes than you should know by now that the pictures are BAD. I don’t feel like putting time into pictures of food. I just don’t. All these I shoot with my iPhone 4 & boom! Done.
Feeds 3 to 4. Total Approximate time 30 minutes. Start to Finish.

Ingredients:
- 1/2 bunch of chopped up asparagus
- 1 zucchini (from Milo’s garden I may add!!!)
- 1 red onion
- 8 pieces of cooked and chopped up bacon. You should probably cook 10 pieces so you can sample 2 of them to make sure they are up to the delicious standards you expect from bacon.
- 1 large package of Buitoni 3 Cheese Tortellini
- 3 cloves chopped garlic.
- 1/2 cup Zesty Italian Dressing (or really any sauce/dressing you like) I usually use the Light version but the grocery store was all out today. It’s a flavorful, light dressing so I’d recommend if you sub it to use something comparable or possibly a pesto. Mmmmm pesto. That sounds good.
Directions:
- After your bacon is cooked your going to cook your tortellini. Just follow the directions on the package. Usually cooks for around 8 minutes. About two minutes into your tortellini cooking toss in your chopped up asparagus with it.
- While your goodies are boiling away start to saute your veggies & garlic. I season mine with whatever is around. Fresh herbs? Toss ‘em in. I didn’t have any today so I just put a few dashes of cumin, coriander seed, fresh ground black pepper & garlic salt.
After your tortellini & asparagus are done in the hot tub strain them. Turn your sauteed veggies off. I usually get a big bowl & begin layering. A scoop of veggies, a few scoops of the tortellini/asparagus mix, a sprinkle of bacon, & few drips of dressing. Repeat until ingredients are all used. I personally like more sauce/dressing than my husband. BRING ON THE SAUCE! So I usually put a few more tablespoons on my own after I plate it. The perfect thing to top this meal off? Garlic bread. Which I forgot at the store. I almost cried. Garlic bread is my favorite.

I love that a little toddler paw made its way into this awful picture. It looks like my Grandma took it.
Toss out the bacon & you have yourself an easy vegetarian dish as well. =) Wanna kick it up a caloric notch? Try putting crumbles of goat cheese in the mix!
